A master class from a famous chef: honey shrimp Bali (photos)

The island of Bali, on the South by the Indian ocean, from the North — Bali sea Pacific ocean, and because the local cuisine is famous for its seafood. Usually they are served with various spicy sauces. Local master class on cooking of shrimps under spicy-sweet sauce was able to visit Today. Showed it to the chef of the famous Balinese restaurant “House shrimp” Vijana.

Ingredients (3 servings):

  • Chili pepper, garlic to taste
  • Soy sauce 2 tbsp.
  • Oyster sauce 2 tbsp
  • Honey: 2 tbsp
  • Sugar 2 tbsp.
  • Salt to taste
  • White pepper to taste
  • Large shrimp 9 PCs.
  • Lime 2 PCs.
  • Coconut or olive oil 300 g

Cooking (50 minutes):

Step 1: Prepare sauce

Peel the pepper, whisk it in the blender along with the garlic. The resulting mass pour in the pan. Add the honey, soy and oyster sauce, salt, pepper, and tormented on low heat, stirring occasionally, 15 minutes.

Step 2: marinade for shrimp

Spread shrimp skewered on long wooden skewers in a bowl, pour juice of lime or lemon, a little salt, add white pepper. All mix well, allow to stand for 10 minutes.

Step 3: Fry shrimp in deep fat

Bring to a boil the oil, spread the prawns and fry them, turning, for 3 minutes. Then we put them on a paper towel (on Bali and their spread on a banana leaf).

Step 4: Cook on the grill

Fried shrimp spread on a lattice, 1 minute and fry on the grill, then generously grease the sauce and hold for another 5 minutes on the grill on one side, and then 5 minutes on the other.

Prepared shrimps collected by the “house”, combining skewers with a ring of pepper or onion pen. Served with greens and sauce. Bon appetit!
